Smørrebrød is the dish that says everything about how Danes think about food. The name means "butter and bread," an open sandwich on a sturdy slice of naturally fermented rugbrød rye bread. These open sandwiches are now considered an art form: layers of salted herring, pickled cucumber, egg, shrimp, or roast beef, architecturally arranged on that same dark bread.

Wienerbrød, the Danish pastry, carries one of the great ironies of food history. It wasn't actually invented by Danes. Jordnær is a rising star located in Gentofte, just a few minutes from Copenhagen. Since its opening, it has earned three Michelin stars. Chef Eric Vildgaard and Tina Kragh have created an experience with impeccable service, refined cuisine, and a wine list dominated by the finest French sparkling wines.

At Istid, each scoop of ice cream is made to order with a dramatic splash of liquid nitrogen, eliminating the need for excessive sugar.
